4 1/2 Cups Spelt Flour
3 cups Almond Milk
1 cup Chocolate Chips
1/2 cup of oil
3 Tbsp Flaxseed Meal
2 tbsp Baking Powder
1tsp vanilla
3/4 cup of Blueberry Juice
1/2 cup pomegranate juice
a pinch of salt
Lots of Maple Syrup
Mix together the flour, salt, and baking powder in a large bowl. Next prepare your egg replacer by mixing the flaxseed meal and 6 tbsp’s of water, let that sit for about 10 minutes until it becomes gelatinous. In a separate bowl whisk together vigorously the almond milk, egg replacer, oil, vanilla, and a 1/2 cup of Maple syrup. Then combine the wet and dry mixtures and stir until is just mixed (be careful not to over mix). Now split the batter into two bowls one that will stay light and untouched, and another that you will and the blueberry and pomegranate juice to, to change its color. you may need to add a bit more flour to keep a nice consistency with the batter (it should be runny but not too runny). Now heat up an oiled skillet on the stove and start frying the pancakes, Try lots of different shapes and mixtures of the two batters. You can also try setting a cookie cutter on the skillet and pouring the batter into it to give a shaped pancake. Serve your space cakes with ample maple syrup, and enjoy.
