Recipe: The Belly Bomb Burrito

Ingredients:
1 bulb of garlic
3 cups of soaked and boiled kidney beans
1 large onion
4 limes
3 jalapeno
1 field cucumber
2 ripe avocados
1 bunch of cilantro
1 ripe mango
2 roma tomatoes
1 green leaf lettuce
1 package of large tortillas
lots of canola oil for frying
vegan sour cream
Lots of cumin, coriander, and black mustard seeds
Process
This is a bit of a tricky recipe. Jason of the weakerthans basically came in and made it for us. Here is the way we saw it:
Roast up a very healthy amount of the spices in a cast iron pan and then grind them up. Roast your jalapeno peppers whole on a BBQ or stove-top. Saute most of the onion with garlic, jalapeno peppers, lots of canola oil, salt and lots of the spices. Once the onions have caramelized nicely dump that mixture and the cooked kidney beans into your food processor and blend them up very well. Oil up your cast iron frying pan again and dump the bean mixture in and fry it for about 15-20 minutes adjusting the spicing to your tastes.
Take the Cucumber, cilantro, mango, tomatoes, and remaining onions and chop them all up. Mix them together with the lime juice and some olive oil for a nice fresh salsa which will go on the burrito.
Blend the avocado up with some salt, pepper, lime juice, and cayenne for the top of the burrito.
Fry one side of your tortilla on an oiled surface, load the tortilla up with beans, salsa, chopped lettuce and some vegan sour cream. Fold it and Roll it up, top it with avocado and your good to go.
