Recipe: Mattar Paneer (Tofu)

The Ingredients:

1 medium onion
1/2 cup tomato sauce
2 tbsp vegetable oil
1/2 cup soy yogurt
1 block of tofu
1 cup of water
2 cups frozen peas
1 tsp salt
1 1/2 cups brown rice
1 tsp fresh ginger
1/2 tsp cumin seeds
1/4 tsp turmeric
2 tsp coriander powder
1/2 tsp cayenne
3/4 tsp garam masala

In a blender or food processor grind onion and ginger to a smooth paste. Cube the tofu and fry it up in a frying pan at mdium high heat with a bit of oil. Heat 1 tbsp oil in a separate skillet over medium high heat. add cumin seeds and cook until golden brown. Add the onion mixture and cook until most of the liquid has evaporated. add the remaining tbsp of oil and cook until the onions are golden brown, stirring as needed. Whip the yogurt with a fork until it is smooth. gradually add 1 tbsp at a time. Add turmeric, corriander and cayenne. Continue to cook until most of the liquid evaporates. Add water, peas, and salt. Bring to a boil cover with lid and reduce heat to a simmer for 10 minutes. Toss in the fried tofu and simmer for another -7 minutes. Add the Gram masala at the end and stir it in. Yum yum.
