Ingredients:
1 bunch of green onions
2 yellow onions
3 cloves of garlic
1 red pepper
4 small tomatoes
1 1/2 cups of rice
2 cans of black beans
1 block of tofu
1 lemon
1 bunch of cilantro
1 package of corn tortillas
3 tbsp oil
2 tbsp of tamari
1/2 cup of nutritional yeast
1/2 tbsp chili powder
salt and pepper
Start by getting your rice cooking in 3 cups of water. Chop and saute the garlic and onions with some salt and pepper. Once the onions become translucent add in the black beans and chili powder with a very small amount of water. Let this mixture fry up until some of the beans fall apart and become a bit of a paste. Chop your tofu into strips that are about an inch wide. Put them in a bowl and dump the tamari on them, then roll them in the nutritional yeast. In a separate frying pan fry the tofu in a bit of oil on both sides until it becomes brown on the outer edges. Chop the Red pepper, green onion, and cilantro for a nice little fresh salsa. mix them in a bowl with the juice of the lemon. When everything is just about finished cooking fry your corn tortillas on each side for about a minute to heat them up. To assemble, put down a tortilla, then three strips of the tofu on top, then a large scoop of the beans, then some of the fresh salsa. Serve with rice, and a cool glass of orange juice. yum Yum.
