The Recipe:
Filling:
4 plums
2 ripe bananas
2 mangos
3/4 cup of chopped, pitted dates
1 cup of cherries
1/4 cup of brown rice syrup
1/4 cup of maple syrup
1/2 cup of Trail Mix
Optional: Ice cream for the side.
The Pie Crust
3 1/2 cups light Spelt Flour
1 cup shortening
3/4 cup boiling water
2 tbsp baking powder
1 tsp salt
Process
Mix shortening and water until creamy. Sift dry ingredients together in a large bowl. Mix in the creamy shortening mixture and knead into a dough. Roll out the dough and cut little circles to line your tart shells. Pre bake them at 350 for 10 minutes.
In a sauce pan at medium high heat stir together the Dates, Plums, bananas, Maple syrup, and Brown Rice Syrup until it begins to reduce (for about 10 minutes). Meanwhile chop up the rest of the fruit into bite size pieces. When the pie shells are finished their pre-bake dump some of the hot date mixture into the tart shell. Add some of the fresh fruit and trail mix. You can then choose to cover each tart or leave them top-less. From there bake them up for 15-20 minutes at 375. Now your ready to enjoy your language tarts.
