Recipe: Blueberry Cornmeal Muffins

Ingredients:
1 cup Corn meal
2 cups Light Spelt flour
2 1/2 tsp - Baking Powder
3/4 cup of Blueberries
1cup almond milk
1/2 cup Safflower Oil
1 tsp Vanilla
1/2 tsp Salt
1/3 cup Maple Syrup
In a large bowl mix the flour, baking powder, corn meal, and salt. In a separate bowl whisk together the almond milk, oil, vanilla, and maple syrup. Combine the wet and dry bowls, and add the blueberries and mix them all together. Preheat your waffle iron, and bruch some oil on it. Drop the batter down in the center of the waffle iron allowing some space for it to expand when you close it. Let it cook for about 2-3 minutes, until your waffles are a delicious golden brown.
