Recipe: Squash and Pear Soup

Recipe:
1 onion
1 bulb of garlic
3 Leeks
2 apples
1 butternut squash
3 ripe pears
1 cube of soup stock
1 cup of almond milk
3 tbsp of buttery stick or margarine
2 tbsp grated ginger
Salt and pepper to taste
Start by Sauteing you garlic, and onions with the margarine in the bottom of a large soup pot. You’ll also want to get your squash baking up in your oven at about 400, If you like you can add some margarine and maple syrup to it for flavoring. Next add your chopped leeks, apples and pears to the saute. Once the saute has browned up nicely add in the soup base, ginger, almond milk and a couple of cups of water. Once the squash is mostly cooked chop it up and add it as well. Let that cook away for quite a while at medium heat. Once you’ve given it plenty of time to cook you can puree it in a food processor and dump it back into the pot to cook for another 5 mintues or so. Now your ready to enjoy your delicious soup.
