Recipe: Coco Love’s Polenta Bicycle Wheel Lasagna

Ingredients:
You’ll need:
2 Japanese eggplants
2 packages of polenta
2 large tomatoes
1 large jar of good tomato sauce
2 blocks of soy cheese
4 tbsp olive oil
1 bulb of garlic
1 onion
thyme, oregano, and rosemary
Saute the onion, and garlic in the olive oil. Add in the chopped tomatoes (save a few slices for the top of the lasagna), the tomato sauce, and spices and let simmer for 5-10 minutes. Slice the eggplant and polenta into circular “wheel-like” shapes. When the sauce is ready you can begin to assemble the lasagna. Lay down alternating layers of eggplant, sauce, grated soy cheese, and polenta. On the top add one final layer of cheese and set in a few circular tomato, and eggplant slices. Bake for 30-40 minutes at 375.
